Saffron Rice with Shrimps

Ingredients

  • 3 Cups of Punjabi AlMuhaidib Basmati Rice
    5 ¼ Cups boiling water
    4 Tbsp vegetable oil
    1 large onion, chopped
    1 Tbsp mixed spices
    2 Tsp crushed garlic
    1 ½ (Tsp salt (as desire

    1 kg of large shrimps, peeled and divined
    ½ cup of chopped coriander
    1 Tsp of saffron, soaked into 2 Tbsp of hot water
    2 Tsp crushed garlic
    2 Tsp mixed spices
    1 (tsp salt (as desire

    Garnish - coriander

METHOD

1. Wash the rice thoroughly and soak in lukewarm water for 30 minutes.
2. To prepare the shrimps: mix all the shrimps ingredients and leave to marinate for 30 minutes.
3. To make the rice: heat the oil into a medium pot then add the onion and sauté for 3 - 4 minutes then add the garlic and stir for 2 more minutes.
4. Strain the rice very well then add it to the pot along with the boiling water, mixed spices and salt and stir very well, bring to boil then put the lid on and leave to cook on low heat 15 minutes.
5. Uncover the pot, add the shrimps and the marinade liquid on top of the rice, put the lid back and leave to cook for 12 -15 more minutes.
6. place the rice into serving dish and top it with the shrimps, garnish with coriander leaves.
