Rice with Kofa and Pine nuts

Ingredients

  • 3 Cups of Punjabi AlMuhaidib Basmati Rice
    5 ¼ Cups boiling water
    4 Tbsp vegetable oil
    1 Medium onion, thinly sliced
    2 Tsp ground coriander
    1 cinnamon stick
    1 ½ (Tsp salt (as desire

    750 gm ground lamb
    1 small onion, shredded
    1 piece of bread soaked in water and squeezed 2 Inch
    3 Tbsp vegetable oil
    3 Garlic cloves, thinly sliced
    1/3 Cup of toasted pine nuts
    ½ Cup chopped coriander
    1 Tsp ground coriander
    ½ Tsp ground black pepper
    ½ (Tsp salt (as desire

METHOD

1. Wash the rice thoroughly and soak in lukewarm water for 30 minutes.
2. To prepare the Kofta: in a medium bowl, mix the ground lamb, onion, soaked bread, ground coriander, black pepper and salt and shape into 1 inch balls.
3. To make the rice: heat the oil into a medium pot then add the onion and sauté for 4 -5 minutes or until nice golden, add the rice, boiling water, cinnamon stick, ground coriander and salt, bring the rice to boil then put the lid on and leave to cook on low heat for 20 – 25 minutes or until cooked.
4. Mean while, heat the remaining 3 tablespoons of oil in a large skillet, add the garlic and sauté for 1 -2 minutes then add the kofta and stirring continuously for 5 minutes. Add the pine nuts and coriander and stir to combine.
5. Serve the rice topped with the kofta and pine nuts mixture.
